Steps

  1. Prep first: dice the onion, mince the jalapeño and garlic, peel and cube the sweet potato, and chop the cilantro.
  2. Heat the canola oil in a Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it up, until browned, about 6 minutes.
  3. Add the onion and jalapeño and cook until softened, about 4 minutes. Stir in the garlic, chili powder, cumin, smoked paprika and oregano and cook 1 minute until fragrant.
  4. Stir in the tomato paste and cook 1 minute, then add the sweet potato, black beans, diced tomatoes with their juice, coconut milk, water and salt.
  5. Bring to a boil, then lower the heat, cover and simmer, stirring now and then, until the sweet potato is tender and the chili has thickened, about 30 minutes. The turkey should reach 165°F (74°C).
  6. While it simmers, toast the pumpkin seeds in a dry skillet over medium heat until they pop, 3 to 4 minutes.
  7. Stir the lime juice into the chili. Ladle into bowls and top with the cilantro and toasted pumpkin seeds.
