Grilled Kale and Romaine with Garlic-Herb Oil

Ingredients

  • 9½ cups chopped200 gKaletough stems removed, leaves left whole
  • 8½ cups chopped400 gRomaine lettuce2 hearts, halved lengthwise with root end intact
  • 2½ tbsp36 gOlive oil
  • 4 cloves12 gGarlicfinely minced
  • 3 tbsp chopped12 gFresh parsleyfinely chopped
  • ¼ cup leaves6 gFresh basilfinely chopped
  • 1½ tbsp20 gLemon juice
  • ¼ tsp0.5 gCrushed red pepper
  • ¼ tsp1.5 gSalt
  • ¼ tsp0.5 gBlack pepper
  • ¼ cup crumbled40 gFeta cheesecrumbled

Steps

  1. Preheat the grill to medium-high and clean the grates.
  2. Make the garlic-herb oil first: in a small bowl stir together half of the olive oil, the garlic, parsley, basil, lemon juice, red pepper flakes and black pepper. Set aside.
  3. Rinse and dry the kale leaves and romaine halves well so they char instead of steam.
  4. In a large bowl, toss the kale with half of the remaining olive oil (a quarter of the total) and half of the salt. Brush the cut sides of the romaine with the last of the olive oil and sprinkle with the remaining half of the salt.
  5. Grill the kale in a single layer, turning once, for 1 to 2 minutes per side until the edges are crisp and lightly charred. Move to a platter.
  6. Grill the romaine cut side down for 2 to 3 minutes until charred and just wilted at the edges, then set it on the platter with the kale.
  7. Spoon the garlic-herb oil over the warm greens, scatter the feta on top and serve right away.
