- 3 cloves9 gGarlicminced
- ¼ cup60 gOlive oil
- 2 tbsp30 gApple cider vinegar
- 1½ tbsp20 gLemon juice
- 2 tsp2 gDried oregano
- ½ tsp1 gCrushed red pepper
- 1 tsp2 gGround cumin
- 1 tsp6 gSalt
- ¾ tsp2 gBlack pepper
Steps
- Make the chimichurri first: in a bowl, stir together the parsley, cilantro, garlic, cider vinegar, lemon juice, oregano, red pepper flakes, two-thirds of the olive oil and one-third of the salt. Set aside so the flavors meld.
- Cook the quinoa: bring the quinoa, the water and one-third of the salt to a boil in a saucepan, cover, and simmer on low for 15 minutes. Turn off the heat and let it steam, covered, for 5 minutes, then fluff.
- While the quinoa cooks, preheat the grill to medium-high. Rub the flank steak with the cumin, the black pepper and the remaining one-third of the salt.
- Brush the zucchini, red bell pepper and red onion with the remaining one-third of the olive oil.
- Grill the flank steak 5 to 6 minutes per side until it reaches 145°F (63°C) in the thickest part. Move it to a board and rest at least 3 minutes.
- Meanwhile, grill the zucchini, bell pepper and red onion 3 to 5 minutes per side until tender and charred, then cut into bite-size pieces.
- Slice the steak thinly across the grain.
- Divide the quinoa among four bowls and top with the grilled vegetables, the steak and the cherry tomatoes. Spoon the chimichurri over each bowl and serve.
