Greek-Style Turkey, Spinach and Tomato Rice Bake

Ingredients

  • 1 lb500 gGround turkey, 93% lean
  • 1¼ cups220 gLong-grain white rice, dry
  • 14½ oz411 gDiced tomatoes, canned
  • 2 tbsp30 gTomato paste
  • 2 cups480 gLow-sodium chicken broth
  • 1 medium110 gYellow oniondiced
  • 4 cloves12 gGarlicminced
  • 5 cups loosely packed150 gBaby spinachroughly chopped
  • 1 tbsp15 gOlive oil
  • 1 tbsp3 gDried oregano
  • ½ tsp1 gGround cinnamon
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 2 tbsp30 gLemon juice
  • 1 cup sprigs8 gFresh dillchopped

Steps

  1. Preheat the oven to 375°F (190°C). Dice the onion, mince the garlic, chop the spinach and chop the dill before you start cooking.
  2. Heat the olive oil in a large oven-safe skillet or 9x13-inch-compatible pan over medium-high heat. Add the ground turkey and cook, breaking it up, until browned, about 6 minutes.
  3. Add the onion to the turkey and cook until soft, about 4 minutes. Stir in the garlic, oregano, cinnamon, salt and black pepper and cook 1 minute.
  4. Stir in the tomato paste and cook 1 minute, then add the canned tomatoes with their juice and the chicken broth and bring to a simmer. This is the tomato sauce that binds the casserole.
  5. Stir in the uncooked rice and the spinach until the spinach wilts. If your skillet isn't oven-safe, transfer everything to a 9x13-inch baking dish.
  6. Cover tightly with a lid or foil and bake for 40 minutes, until the rice is tender and has absorbed the liquid and the turkey reaches 165°F (74°C).
  7. Let the casserole rest, covered, for 5 minutes. Drizzle with the lemon juice, fluff gently, and scatter the dill over the top before serving.
