  • ⅔ cup50 gOld-fashioned rolled oats

Steps

  1. Preheat the oven to 375°F (190°C). Before you start, divide the canola oil into two-thirds for the tofu and one-third for the crumb, and divide the green onion into half for the casserole and half for garnish.
  2. Spread the brown rice in a 9x13-inch baking dish. Stir in the garlic, ginger and boiling water, cover tightly with foil and bake for 45 minutes.
  3. Meanwhile, toss the tofu with the soy sauce and two-thirds of the canola oil, spread on a lined sheet pan and roast on another rack for 25 minutes, turning once, until golden at the edges.
  4. Make the miso-yogurt sauce: in a large bowl, whisk the Greek yogurt, miso paste, lime juice, toasted sesame oil and black pepper until smooth.
  5. Make the oat crumb: in a small bowl, mix the oats, sesame seeds and the remaining one-third of the canola oil.
  6. When the rice has baked 45 minutes, uncover it and stir in the edamame, broccoli, carrot, roasted tofu, the miso-yogurt sauce and half of the green onion. Spread evenly.
  7. Scatter the oat crumb over the top and bake uncovered for 25 minutes, until the rice is tender, the vegetables are crisp-tender and the crumb is golden.
  8. Rest 5 minutes, then sprinkle with the remaining half of the green onion and serve.
