  • 2½ tbsp grated15 gFresh gingergrated
  • 1 tsp3 gGround turmeric
  • 1 tbsp14 gCanola oil
  • 2½ tsp15 gFish sauce
  • 2 tbsp30 gLime juice
  • ¾ cup chopped12 gFresh cilantrochopped
  • 2 medium30 gGreen onionsthinly sliced
  • ⅛ tsp1 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Before you start cooking, dice the yellow onion, slice the carrot, celery and green onions, mince the garlic, grate the ginger, chop the cilantro, rinse the rice, and cut the salmon into chunks; keep the salmon refrigerated until step 6.
  2. Heat the canola oil in a large pot over medium heat. Add the yellow onion, carrot and celery and cook, stirring, until the yellow onion softens, about 6 minutes.
  3. Stir in the garlic, ginger and turmeric and cook until fragrant, about 1 minute.
  4. Pour in the chicken broth and water, add the rice, and bring to a boil. Lower the heat and simmer, partly covered, until the rice is tender, about 15 minutes.
  5. Stir in the coconut milk and fish sauce and return to a gentle simmer; do not let it boil hard.
  6. Season the salmon with the salt and black pepper, slip it into the soup and simmer gently without stirring until it flakes easily and reaches 145°F (63°C), about 5 minutes.
  7. Turn off the heat and gently stir in the lime juice so the salmon stays in chunks.
  8. Ladle into bowls and top with the cilantro and green onions.
