  • 1¼ tsp3 gPaprika (sweet or smoked)
  • ½ tsp1 gBlack pepper
  • ⅓ cup grated40 gGrated Parmesan
  • ¼ cup25 gPlain dry breadcrumbs

Steps

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with a little of the olive oil (about one quarter).
  2. Bring the water to a boil in a large pot with half of the salt. Add the potato slices and cook 5 to 6 minutes, until just tender at the edges. Drain well.
  3. While the potatoes cook, heat half of the olive oil in a large skillet over medium heat. Add the onion and cook 5 minutes until soft, then add the garlic for 30 seconds.
  4. Add the spinach to the skillet and stir until wilted, about 2 minutes. Remove from the heat and let cool slightly.
  5. Make the yogurt sauce: in a large bowl whisk the Greek yogurt, milk, egg, lemon zest, lemon juice, dill, paprika, black pepper and the remaining half of the salt.
  6. Pat the shrimp dry. Fold the drained potatoes, the onion-spinach mixture and the raw shrimp into the yogurt sauce until everything is coated.
  7. Spread the mixture evenly in the baking dish.
  8. Make the topping: stir the Parmesan and breadcrumbs with the remaining olive oil and sprinkle over the casserole.
  9. Bake 25 to 30 minutes, until the topping is golden, the shrimp are pink and opaque (145°F / 63°C) and the sauce reaches 160°F (71°C) in the center.
  10. Rest 5 minutes before serving.
