- 1 tbsp14 gCanola oil
- 1½ tbsp8 gCurry powder
- ¾ tsp2 gGround turmeric
- 3 cups720 gLow-sodium chicken broth
- 1⅓ cups300 gCoconut milk, cannedstirred well
- 1¾ tsp10 gFish sauce
- ½ tsp3 gSalt
- 3 cups loosely packed90 gBaby spinach
- 2 tbsp30 gLime juice
- ⅔ cup chopped10 gFresh cilantrochopped
Steps
- Prepare all the vegetables and cut the pork tenderloin before you start heating the pot.
- Heat half of the canola oil in a Dutch oven over medium-high heat. Add the pork and brown it on two sides, about 4 minutes, then move it to a plate; it will finish cooking in the soup.
- Add the remaining half of the canola oil and the onion to the pot and cook over medium heat until soft, about 5 minutes. Stir in the garlic, ginger, curry powder and turmeric and cook 1 minute until fragrant.
- Pour in the chicken broth, scraping up the browned bits. Add the potato, carrot and salt, bring to a boil, then cover and simmer gently until the vegetables are very tender, about 20 minutes.
- Scoop about a third of the potatoes and carrots with some broth into a bowl and mash them smooth, then stir the mash back into the pot to make the soup creamy.
- Stir in the coconut milk and fish sauce, return the pork and its juices to the pot, and simmer uncovered until the pork reaches 145°F (63°C), about 5 minutes; let the soup rest off the heat 3 minutes.
- Stir in the spinach until wilted, then the lime juice. Ladle into bowls and top with the cilantro.
