  • 1½ tbsp8 gCurry powder
  • 1¾ tsp4 gPaprika (sweet or smoked)smoked
  • ¾ tsp5 gSalt
  • ¾ cup150 gRed lentils, dryrinsed
  • 2½ cups600 gLow-sodium chicken broth
  • 1 cup220 gCoconut milk, cannedstirred
  • ½ medium head300 gCauliflowercut into small florets
  • 2 tbsp30 gLime juice
  • ⅔ cup chopped10 gFresh cilantrochopped

Steps

  1. Heat the broiler to high. Lay the bell pepper halves skin side up on a foil-lined sheet and broil 8–10 minutes until blackened; cover with a bowl for 10 minutes, then peel and chop.
  2. While the peppers broil, season the drumsticks with half the salt and the smoked paprika.
  3. Heat the canola oil in a Dutch oven over medium-high heat. Brown the drumsticks in batches, about 3 minutes per side, then move them to a plate.
  4. Lower the heat to medium, add the onion and cook 5 minutes until soft. Stir in the garlic, ginger and curry powder for 1 minute.
  5. Add the chopped roasted pepper, red lentils, chicken broth and the remaining half of the salt. Blend briefly with an immersion blender for a smooth base if you like.
  6. Return the drumsticks to the pot, bring to a boil, then cover and simmer gently 30 minutes, stirring occasionally so the lentils don't stick.
  7. Stir in the coconut milk and cauliflower and simmer uncovered 12–15 minutes until the cauliflower is tender and the drumsticks reach 165°F (74°C) near the bone.
  8. Stir in the lime juice, ladle into bowls and top with the cilantro.
