  • ½ cup chopped30 gFresh parsleyfinely chopped
  • 1½ tbsp12 gCaperschopped
  • ¾ tsp5 gSalt
  • ¾ tsp2 gBlack pepper

Steps

  1. If using wooden skewers, soak 8 of them in water for 20 minutes. Preheat the oven to 425°F (220°C).
  2. On a large rimmed sheet pan, toss the potato, carrot and butternut with one third of the olive oil, half of the cumin, half of the coriander, half of the salt and half of the black pepper. Spread in one layer and roast 20 minutes.
  3. Meanwhile, in a bowl, stir together one third of the olive oil, the remaining cumin, the remaining coriander, two thirds of the garlic, half of the lemon juice, the lemon zest, the remaining salt and the remaining black pepper. Add the tuna and toss to coat; let sit 10 minutes.
  4. Thread the tuna and the red onion onto the skewers, alternating them.
  5. Stir the roasting vegetables, push them to the edges, and lay the skewers across the pan. Roast 8 to 10 minutes, turning once, until the tuna reaches 145°F (63°C) and the vegetables are tender and browned.
  6. While the skewers roast, make the salsa verde: mix the parsley, capers, the remaining garlic, the remaining olive oil and the remaining lemon juice.
  7. Serve the skewers over the roasted vegetables, spooning the salsa verde over the top.
