Steps
- Preheat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment.
- Make the spice rub: in a small bowl, stir together the cumin, coriander, smoked paprika, salt and black pepper.
- In a large bowl, toss the sweet potato and red onion with one third of the olive oil and one third of the spice rub. Spread on the sheet pan and roast for 10 minutes.
- Meanwhile, mix the garlic with another third of the olive oil and the remaining two thirds of the spice rub, and rub it all over the pork tenderloin.
- In the same large bowl, toss the broccoli and red bell pepper with the remaining third of the olive oil.
- Take out the pan, push the sweet potatoes and onion to the edges, add the broccoli and red bell pepper, and set the pork tenderloin in the center.
- Roast for 20 to 25 minutes, until the vegetables are browned and the pork reaches 145°F (63°C) in the thickest part. Rest the pork for at least 3 minutes, loosely covered.
- While the pork rests, whisk the lime juice and honey together.
- Slice the pork, arrange it over the vegetables, drizzle with the lime-honey mixture and scatter the cilantro on top.
