Steps
- Prep first: chop the onion, mince the garlic, cube the butternut and sweet potato, slice the carrot, and chop the kale and parsley.
- Heat half of the olive oil in a Dutch oven over medium-high heat. Add the ground pork with the oregano and red pepper flakes and cook, breaking it up, until browned and it reaches 160°F (71°C), 7 to 8 minutes. Move the pork to a bowl, leaving the drippings in the pot.
- Add the remaining half of the olive oil and the onion to the pot and cook over medium heat until soft, about 5 minutes. Stir in the garlic and rosemary for 30 seconds.
- Add the butternut, sweet potato, carrot, chicken broth, salt and black pepper. Bring to a boil, cover, and simmer until the vegetables are very tender, about 20 minutes.
- Off the heat, stir in the coconut milk and purée the soup with an immersion blender until smooth and creamy.
- Return the pot to medium-low heat, stir in the kale and the cooked pork, and simmer until the kale wilts, about 4 minutes.
- Ladle into bowls and top with the Parmesan and parsley.
