  • 2 cups354 gGreat northern or cannellini beans, canned, drained and rinsed
  • 4⅓ cups960 gReduced-sodium beef broth
  • 2 tsp2 gDried thyme
  • 9½ cups chopped200 gKalestems removed, chopped
  • 1 cup (240 ml)240 gMilk, 2%
  • ⅓ cup grated30 gGrated Parmesan
  • 1 tbsp15 gLemon juice
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper
  • ½ tsp1 gCrushed red pepper

Steps

  1. Prep first: dice the onion and carrot, mince the garlic, cut the cauliflower into florets, and strip and chop the kale.
  2. Heat the olive oil in a Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up, until browned and it reaches 160°F (71°C), about 7 minutes. Transfer the beef to a bowl, leaving the drippings in the pot.
  3. Lower the heat to medium. Add the onion and carrot and cook until softened, about 5 minutes. Stir in the garlic and thyme and cook 1 minute.
  4. Add the cauliflower, half of the great northern beans and the beef broth. Bring to a boil, then cover and simmer until the cauliflower is very tender, about 15 minutes.
  5. Off the heat, blend the soup with an immersion blender until smooth, or carefully blend in batches in a vented blender and return it to the pot.
  6. Return the pot to medium heat. Stir in the remaining half of the beans, the browned beef and the kale. Simmer until the kale is tender, about 8 minutes.
  7. Stir in the milk and heat gently without boiling, about 3 minutes. Stir in the Parmesan, lemon juice, salt, black pepper and red pepper flakes, then ladle into bowls.
