Steps
- Prepare first: dice the onion and bell pepper, mince the garlic, chop the parsley and crumble the feta. Pat the shrimp dry and keep it chilled.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion and bell pepper and cook, stirring, until soft, about 6 minutes.
- Add the garlic, cumin, paprika and red pepper flakes and stir for 1 minute until fragrant. Stir in the tomato paste and cook 1 minute more.
- Add the diced tomatoes with their juice, the coconut milk and the chickpeas. Season with the salt and black pepper, bring to a simmer, then cover and simmer gently for 15 minutes, stirring now and then.
- Meanwhile, bring the water to a boil in a small saucepan, stir in the couscous, cover, take it off the heat and let stand 5 minutes; fluff with a fork.
- Stir the spinach into the stew until wilted, then add the shrimp. Simmer uncovered for 3 to 4 minutes, until the shrimp are pink and opaque and reach 145°F (63°C).
- Take the pot off the heat and stir in the lemon juice.
- Spoon the couscous into bowls, ladle the stew over it, and top with the parsley and feta.
