Steps
- Prep first: cube the potatoes, dice the onion, slice the green and red bell peppers, mince the jalapeño and garlic, cut the cod into chunks and chop the cilantro.
- Season the cod with half of the salt and the black pepper; refrigerate while you build the stew.
- Heat the olive oil in a Dutch oven over medium heat. Add the onion, green bell pepper and red bell pepper and cook 6 minutes until softened.
- Add the garlic and jalapeño, then stir in the cumin, oregano and paprika and cook 1 minute until fragrant.
- Add the diced tomatoes, chicken broth, potatoes and the remaining half of the salt. Bring to a boil, cover, and simmer 15 minutes until the potatoes are nearly tender.
- Stir in the coconut milk and return to a gentle simmer.
- Nestle the cod into the stew, cover, and simmer gently 6 to 8 minutes, without stirring hard, until the fish flakes easily and reaches 145°F (63°C).
- Off the heat, stir in the lime juice gently. Ladle into bowls and top with the cilantro.
