Steps

  1. Prep first: cut the chicken thigh, dice the onion and green bell pepper, mince the jalapeño and garlic, and chop the cilantro.
  2. Heat the canola oil in a Dutch oven over medium-high heat. Brown the chicken thigh pieces in two batches, about 4 minutes per batch, and move them to a plate.
  3. Lower the heat to medium. Add the onion, green bell pepper and jalapeño and cook until soft, about 6 minutes.
  4. Stir in the garlic, cumin, coriander and oregano and cook 1 minute until fragrant.
  5. Add the green chiles and chicken broth, scraping up the browned bits, then return the chicken with its juices.
  6. Bring to a boil, cover, and simmer gently 25 minutes.
  7. Stir in the great northern beans, the frozen corn kernels and the coconut milk. Simmer uncovered 10 minutes until slightly thickened, the corn is hot and the chicken reaches 165°F (74°C).
  8. Season with the salt and black pepper, then stir in the lime juice.
  9. Ladle into bowls and top with the cilantro.
