Steps

  1. Prepare everything first: slice the pork tenderloin, separate the bok choy stems from the leaves, slice the yellow onion, mince the garlic, grate the ginger, chop the cilantro and slice the green onions.
  2. Soak the rice noodles in warm tap water for 15 minutes until pliable, then drain and set aside.
  3. Heat half of the canola oil in a large pot over medium-high heat. Sear the pork tenderloin in one layer for 1 to 2 minutes per side until browned but not fully cooked, then move it to a plate.
  4. Lower the heat to medium and add the remaining half of the canola oil. Cook the yellow onion for 4 minutes until soft, then stir in the garlic, ginger, curry powder and turmeric for 1 minute until fragrant.
  5. Pour in the chicken broth and coconut milk, add the fish sauce and brown sugar, and bring to a gentle simmer for 8 minutes.
  6. Add the bok choy stems and simmer 3 minutes. Return the pork tenderloin with its juices and simmer 2 to 3 minutes until it reaches 145°F (63°C) inside.
  7. Stir in the drained rice noodles, bok choy leaves and spinach and simmer 2 minutes until the noodles are tender and the greens wilt.
  8. Off the heat, stir in the lime juice. Ladle into bowls and top with the cilantro and green onions.
