Steps
- Prep first: dice the onion and green bell pepper, mince the jalapeño and garlic, cube the red potatoes, chop the cilantro, and pat the shrimp dry; keep the shrimp in the fridge until step 6. Leave the frozen corn kernels in the freezer until step 5.
- Heat the canola oil in a Dutch oven over medium heat. Add the onion and green bell pepper and cook, stirring, until soft, about 6 minutes.
- Add the jalapeño, garlic, smoked paprika, cumin and dried oregano and stir for 1 minute until fragrant.
- Pour in the canned diced tomatoes with their juice and the chicken broth, then add the red potatoes and half of the salt. Bring to a boil, cover, and simmer until the potatoes are just tender, about 15 minutes.
- Stir in the coconut milk and the frozen corn kernels (no need to thaw) and simmer uncovered for 5 minutes until the corn is hot and the broth is slightly thickened.
- Season the shrimp with the remaining half of the salt, add them to the pot, and simmer gently for 3 to 4 minutes, until pink and opaque.
- Turn off the heat and stir in the lime juice. Ladle into bowls and top with the cilantro.
