Steps
- Cook the quinoa first: bring the quinoa and 300 g of the water to a boil in a saucepan, cover, simmer 15 minutes, then rest off the heat 5 minutes, fluff and spread on a plate to cool.
- While the quinoa cooks, make the dressing: whisk the tahini, lime juice, ginger, garlic, soy sauce and honey, then whisk in the remaining 120 g of water until creamy and pourable.
- In a large bowl, toss the cabbage, carrot, cucumber and half of the green onion with half of the dressing; set aside to soften slightly.
- Toss the shrimp with the paprika, salt and black pepper.
- Heat the canola oil in a large skillet over high heat. Sear the shrimp in one layer, 1 to 2 minutes per side, until pink and opaque and lightly charred.
- Fold the cooled quinoa, mint and cilantro into the slaw.
- Divide the salad among plates, top with the shrimp, drizzle with the remaining half of the dressing, and finish with the peanuts and the remaining half of the green onion.
