  • ½ tsp1 gGround cardamom

  • 1 tsp4 gVanilla extract
  • ⅓ cup40 gPumpkin seeds (pepitas)roughly chopped
  • 1½ tbsp12 gSesame seeds

Steps

  1. Make the peach layer first: in a bowl, mash about one third of the peach with a fork, then stir in the remaining peach.
  2. Add the chia seeds, the orange juice, half of the maple syrup and the cardamom to the peach and stir well so the chia seeds don't clump.
  3. Let the peach and chia seed mixture stand for 20 minutes, stirring once after 5 minutes, until it thickens and turns jammy.
  4. While it sets, make the vanilla yogurt: stir the Greek yogurt with the vanilla and the remaining half of the maple syrup until smooth.
  5. Make the crunch: in a small bowl, toss the pumpkin seeds, sesame seeds and almonds together.
  6. Assemble in 4 glasses: spoon half of the vanilla yogurt into the glasses, then half of the peach and chia seed mixture, then half of the seed crunch.
  7. Repeat with the remaining half of the vanilla yogurt, the remaining half of the peach and chia seed mixture and the remaining half of the seed crunch on top. Serve right away so the crunch stays crisp.
