Ingredients
- 2 medium236 gBananasliced and frozen
- 1 cup (240 ml)240 gAlmond milk, unsweetenedcold
- ¾ cup (180 ml)200 gPlain kefir, low-fatcold
- 36 gMedjool dates, pittedchopped
- 2½ tbsp chopped20 gWalnuts
- ¼ cup20 gOld-fashioned rolled oats
- ½ tsp1 gGround cinnamon
- ½ tsp2 gVanilla extract
Steps
- Ahead of time, slice the banana and freeze it in a single layer until firm, at least 2 hours or overnight; this is what makes the smoothie icy without watering it down.
- Pour the almond milk into the blender, then add the chopped dates and the oats and let them soak for 5 minutes so they blend smooth.
- Add the walnuts, cinnamon and vanilla to the blender and blend on high until the dates and nuts are completely smooth, about 30 seconds.
- Add the kefir and the frozen banana slices and blend until thick and creamy, about 45 seconds, adding a splash more almond milk only if needed to keep it moving.
- Pour into two chilled glasses, over ice if you like, and serve cold right away.
