- ⅓ cup (80 ml)80 gSoy milk, original
- 2 tbsp40 gMaple syrup

- ½ cup120 gUnsweetened applesauce
- 1 tbsp15 gLemon juice
- ¼ tsp0.5 gGround nutmeg
Steps
- Prepare the fruit first: in a bowl, toss the apple and pear with the lemon juice so they don't brown.
- Stir the applesauce, half of the cinnamon and the nutmeg into the apple and pear; let it sit 10 minutes to turn juicy.
- Make the tofu cream: in a food processor, blend the tofu, soy milk, maple syrup, vanilla and the remaining half of the cinnamon until completely smooth, scraping down the sides, about 2 minutes.
- Divide the tofu cream into eight equal portions and the fruit mixture into eight equal portions.
- In each of four glasses, spoon one portion of tofu cream, then one portion of fruit, then repeat with a second portion of each, so every glass gets two layers of each.
- Chill the parfaits for 30 minutes so the layers set, then serve cold.
