Ingredients
- 1 cup80 gOld-fashioned rolled oats
- ½ oz15 gChia seeds
- 1 cup (240 ml)240 gSoy milk, originaldivided
- 1½ tsp4 gGround cinnamondivided
- 14 oz400 gFirm tofupatted dry and broken into chunks
- 2½ tbsp40 gAlmond butter, no salt added
- 2 tbsp40 gMaple syrupdivided
- 1 tsp4 gVanilla extract
- ⅛ tsp1 gSalt
- 2 medium400 gApplefinely diced
- 1 tbsp15 gLemon juice
- ¼ cup40 gRaisins
Steps
- Oat layer, made the night before: in a bowl, stir together the oats, the chia seeds, two-thirds of the soy milk and half of the cinnamon. Cover and refrigerate at least 8 hours, until the oats are soft and the chia seeds have thickened the mixture.
- Tofu cream: in a blender, blend the tofu, almond butter, the remaining third of the soy milk, two-thirds of the maple syrup, the vanilla and the salt until completely smooth, scraping down the sides as needed. Chill until assembly.
- Apple layer, made just before assembly: toss the diced apple with the lemon juice right away to keep it from browning, then stir in the raisins, the remaining third of the maple syrup and the remaining half of the cinnamon. Let stand 10 minutes so the apples turn juicy and the raisins soften.
- Assemble in four glasses: spoon in half of the soaked oat and chia mixture (about one-eighth per glass), then half of the tofu cream, then half of the apple mixture.
- Repeat with the remaining oat and chia mixture, the remaining tofu cream and the remaining apple mixture, spooning any cinnamon juices from the apple bowl over the tops. Serve cold, or chill up to 4 hours.
