  • 1 tbsp25 gMaple syrup
  • ¾ tsp2 gGround cinnamon

  • 2 tsp10 gLemon juice
  • ½ cup (120 ml)120 gHeavy creamchilled
  • ½ tsp2 gVanilla extract

Steps

  1. Prepare the fruit first: halve the cherries and cube the pear.
  2. In a medium pot, combine the cherries, pear, apple juice, maple syrup, cinnamon and nutmeg. Bring to a simmer over medium heat, stirring now and then.
  3. Simmer gently for 8 to 10 minutes, until the pear is tender and the cherries release their juices.
  4. In a small cup, stir the cornstarch into the cold water until smooth to make a slurry.
  5. Stir the slurry into the pot and simmer 1 to 2 minutes more, until the syrup turns glossy and thickens. Remove from the heat and stir in the lemon juice.
  6. Let the compote cool for about 10 minutes so it is warm, not hot.
  7. Meanwhile, whip the heavy cream with the vanilla in a chilled bowl until soft peaks form.
  8. Divide the whipped cream among 4 bowls and spoon the warm compote over the top.
  9. Refrigerate any leftover compote promptly in a covered container and use within 3 days.
