Steps
- Prep first: slice the pork shoulder, red bell pepper, green bell pepper and red onion, trim the snow peas, grate the ginger and mince the garlic.
- Combine the rice with 420 g of the water in a saucepan, bring to a boil, cover, and simmer on low for 18 minutes; rest covered off the heat for 10 minutes.
- While the rice cooks, toss the pork with half the cornstarch and half the soy sauce; let it sit 10 minutes.
- Make the sauce: whisk the remaining 120 g water, the remaining half of the cornstarch, the remaining half of the soy sauce, the honey, the lime juice and the red pepper flakes in a bowl.
- Heat half the canola oil in a large skillet over high heat. Sear the pork in a single layer, in two batches if needed, 4 to 5 minutes until browned and cooked to 145°F (63°C); transfer to a plate and rest 3 minutes.
- Add the remaining half of the canola oil to the skillet. Stir-fry the red onion, red bell pepper and green bell pepper for 3 minutes, then add the snow peas and cook 1 minute more until crisp-tender.
- Add the ginger and garlic and stir 30 seconds until fragrant.
- Return the pork, stir the sauce, pour it in and toss 1 to 2 minutes until glossy and thickened.
- Serve over the rice, sprinkled with the sesame seeds.
