  • 2 tsp4 gLemon zest
  • 1½ tbsp packed20 gBrown sugar
  • 1½ tsp6 gVanilla extract
  • 2¼ tsp6 gCornstarch
  • 2 cups500 gWater
  • 2 cups160 gOld-fashioned rolled oats
  • 1 cup (240 ml)250 gSkim milk
  • ⅛ tsp1 gSalt
  • 3½ tbsp whole30 gAlmondssliced

Steps

  1. Prepare first: cube the pear, zest the lemon and slice the almonds. Set out two small bowls.
  2. In a medium pot, toast the almonds over medium heat, stirring, for 3 to 4 minutes until fragrant. Tip them into a bowl and set aside.
  3. In the same pot, combine the pear, orange juice, lemon zest and brown sugar. Bring to a simmer over medium heat, cover and cook for 8 minutes, until the pear is just tender.
  4. Add the frozen blueberries and simmer uncovered for 5 minutes, until they burst.
  5. In a small bowl, stir the cornstarch with a portion of the water (about 2 tablespoons) until smooth. Stir this slurry into the fruit and simmer for 1 minute until glossy and thickened.
  6. Take the pot off the heat and stir in the vanilla. Spoon the compote into the second bowl and rinse the pot.
  7. In the pot, bring the rest of the water, the milk and the salt to a simmer. Stir in the oats and cook over medium-low heat, stirring often, for 5 to 6 minutes until creamy.
  8. Divide the oatmeal among 4 bowls, top each with a quarter of the compote and a quarter of the toasted almonds.
  9. Cool any leftover compote for up to 30 minutes, then cover and refrigerate promptly. Use within 3 days; this is not a canned or shelf-stable preserve.
