Vanilla Mango Coconut Chia Bites

Ingredients

  • ⅓ cup diced60 gMangofinely diced and patted dry
  • 3 dates72 gMedjool dates, pittedroughly chopped
  • ⅓ cup whole50 gAlmonds
  • ½ cup40 gOld-fashioned rolled oats
  • 2 tbsp30 gAlmond butter, no salt added
  • ½ oz15 gChia seeds
  • 3½ tbsp20 gSweetened shredded coconutdivided
  • 1½ tsp6 gVanilla extract
  • 1 tsp5 gLime juice
  • ⅛ tsp0.5 gSalt

Steps

  1. Prepare first: finely dice the mango, then pat it very dry with paper towels so the bites hold together. Roughly chop the dates.
  2. Pulse the almonds and oats in a food processor until coarse and crumbly, about 10 pulses.
  3. Add the dates, almond butter, vanilla, lime juice and salt to the food processor and blend until the mixture clumps when pinched, scraping down the sides as needed.
  4. Add the chia seeds and half the shredded coconut and pulse a few times to mix them in.
  5. Transfer the mixture to a bowl and fold in the diced mango by hand so the pieces stay chunky.
  6. Scoop the mixture into 12 tablespoon-size portions and roll each firmly into a ball, about 3 bites per serving.
  7. Spread the remaining half of the shredded coconut on a plate and roll each ball in it to coat.
  8. Chill the bites in the fridge for at least 30 minutes to firm up. Keep them covered in the fridge for up to 4 days.
