Vanilla Cashew-Style Pecan Maple Bites

Ingredients

  • ⅔ cup chopped70 gPecans
  • ⅔ cup50 gOld-fashioned rolled oats
  • 2½ tbsp40 gAlmond butter, no salt addedstirred well
  • 1 tbsp25 gMaple syrup
  • 1½ tsp6 gVanilla extract
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp0.5 gSalt
  • 1½ tbsp12 gSesame seeds

Steps

  1. Line a plate or small tray with parchment and clear a spot in the fridge.
  2. Finely chop the pecans by hand or pulse briefly in a food processor until they look like coarse crumbs.
  3. In a bowl, stir together the chopped pecans, the oats, the cinnamon and the salt.
  4. In a second bowl, whisk the almond butter, the maple syrup and the vanilla until smooth and glossy.
  5. Scrape the almond butter mixture into the pecan mixture and mix with a spatula, then knead with your hands until it holds together when squeezed.
  6. Let the mixture rest 10 minutes so the oats soften slightly.
  7. Spread the sesame seeds on a small plate. Roll the mixture into 12 balls, about 3 per serving, then roll each ball in the sesame seeds to coat.
  8. Set the bites on the lined plate and chill 20 minutes until firm. Store covered in the fridge.
