Ingredients
- 1 cup150 gFrozen strawberries, unsweetened
- ½ cup75 gFrozen blueberries, unsweetened
- 5½ oz150 gFirm tofusilken-style block, broken into pieces
- 1 cup (240 ml)240 gSoy milk, originalchilled
- 2 tsp10 gLemon juice

- 1¼ tsp5 gVanilla extract

Steps
- Break the tofu into pieces and measure the soy milk, frozen strawberries and frozen blueberries so everything stays cold.
- Add the soy milk, tofu, lemon juice, maple syrup and vanilla to the blender and blend for 30 seconds until completely smooth; the lemon gives the plant base a gentle yogurt-like tang.
- Add the cardamom and most of the cinnamon, keeping a small pinch of the cinnamon aside for garnish.
- Add the frozen strawberries and frozen blueberries and blend on high for 45–60 seconds until thick, frosty and even in color.
- Pour into two glasses, over ice if you like, and dust the tops with the reserved pinch of cinnamon. Serve right away.
