- 2 tbsp30 gUnsalted buttermelted
- 3 tbsp25 gAll-purpose flour
- 1 cup240 gLow-sodium chicken broth
- 1 cup (240 ml)240 gMilk, 2%
- 2 tsp10 gYellow mustard
- 2 tsp2 gDried thyme

- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
- ¾ cup60 gOld-fashioned rolled oats
- ¼ cup chopped30 gPecanschopped
- 3 tbsp grated20 gGrated Parmesan
Steps
- Preheat the oven to 400°F (200°C). Peel and cube the sweet potato, trim and cut the green beans, slice the mushrooms, dice the onion and mince the garlic.
- Heat the olive oil in a large ovenproof skillet or Dutch oven over medium-high heat. Add the ground turkey, onion and mushrooms and cook, breaking up the turkey, until it is browned and reaches 165°F (74°C), about 8 minutes.
- Stir in the garlic, thyme, rosemary, black pepper and the salt; cook 1 minute.
- Sprinkle the flour over the turkey and stir 1 minute. Slowly stir in the chicken broth, then the milk and mustard, and simmer until the sauce thickens, about 3 minutes.
- Stir the sweet potato and green beans into the creamy sauce, cover and simmer 8 minutes, until the sweet potato is just starting to soften. If using a skillet that isn't ovenproof, transfer everything to a 9x13-inch baking dish.
- Make the topping: in a bowl, toss the oats, pecans and parmesan with the melted butter until evenly coated.
- Scatter the oat crumb over the casserole and bake uncovered 25 to 30 minutes, until the sweet potato is tender, the sauce bubbles and the topping is golden.
- Let the casserole rest 10 minutes before serving.
