  • ¼ tsp0.5 gGround nutmeg
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 1 cup shredded100 gCheddar cheeseshredded

Steps

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with a little of the olive oil (about a teaspoon of the total).
  2. Make the sauce base: put the butternut and chicken broth in a saucepan, cover and simmer 12–15 minutes until the squash is very soft.
  3. While the squash simmers, heat half of the remaining olive oil in a large skillet over medium-high heat. Add the turkey breast, season with half of the salt and half of the black pepper, and brown 4–5 minutes; it will finish in the oven. Move the turkey to a bowl.
  4. Add the rest of the olive oil to the skillet, then the onion and mushrooms; cook 6 minutes until the mushrooms are browned. Stir in the garlic, thyme and rosemary for 1 minute.
  5. Blend the butternut with its broth, the milk, the nutmeg and the remaining salt and black pepper until smooth and creamy.
  6. In the baking dish, combine the sweet potato, green beans, browned turkey and the onion-mushroom mixture. Pour the creamy butternut sauce over and stir to coat.
  7. Cover with foil and bake 30 minutes, until the sweet potato is nearly tender.
  8. Uncover, scatter the cheddar over the top and bake 12–15 minutes more, until the cheese is bubbly and golden, the sweet potato is tender and the turkey reaches 165°F (74°C).
  9. Rest 5 minutes, then sprinkle with the parsley and serve.
