  • 2 cups cut200 gGreen beanstrimmed and cut into 2-inch pieces
  • 1 tsp6 gFish sauce
  • 2 tbsp30 gLime juice
  • ⅔ cup chopped10 gFresh cilantrochopped
  • 1 cup200 gLong-grain brown rice, dryrinsed
  • 2 cups475 gWater

Steps

  1. Start the rice: bring the water and brown rice to a boil in a saucepan, cover, and simmer on low for 45 minutes, then rest covered off the heat.
  2. Make the meatballs: in a bowl mix the ground turkey, egg, breadcrumbs, the green onion whites, half the ginger, half the garlic and half the salt. Roll into about 20 balls.
  3. Heat the canola oil in a Dutch oven over medium-high heat. Brown the meatballs in batches, about 5 minutes per batch, and set them on a plate; they will finish cooking in the stew.
  4. Lower the heat to medium. Add the diced yellow onion to the Dutch oven and cook 5 minutes until soft. Stir in the remaining half of the ginger and remaining half of the garlic for 1 minute.
  5. Stir in the curry powder and turmeric for 30 seconds, then add the butternut, vegetable broth and coconut milk. Bring to a simmer and cook 10 minutes.
  6. Return the meatballs to the pot with the green beans, cover, and simmer 10 to 12 minutes, until the squash is tender and the meatballs reach 165°F (74°C) in the center.
  7. Stir in the fish sauce, lime juice and the remaining half of the salt.
  8. Fluff the rice and serve it in bowls, ladle the stew over, and top with the cilantro and the green onion greens.
