  1. Prep first: dice the onion, slice the carrot and celery, cube the sweet potato, mince the garlic and chop the parsley.
  2. Season the chicken thighs with half the salt and the black pepper.
  3. Heat the olive oil in a Dutch oven over medium-high heat. Brown the chicken thighs about 3 minutes per side, then move them to a plate (they finish cooking later).
  4. Add the onion, carrot and celery to the pot and cook 5 minutes, scraping up browned bits.
  5. Stir in the garlic, tomato paste, thyme and paprika and cook 1 minute until the paste darkens.
  6. Add the canned tomatoes, chicken broth and sweet potato. Return the chicken thighs, bring to a boil, then cover and simmer gently 20 minutes, until the chicken reaches 165°F (74°C).
  7. Lift out the chicken, shred it with two forks and set aside.
  8. Bring the soup back to a boil, add the pasta and cook uncovered about 9 minutes, until tender.
  9. Return the shredded chicken to the pot, stir in the lemon juice and the remaining half of the salt.
  10. Ladle into bowls and scatter the parsley over the top.
