  • 1 tbsp15 gLime juice
  • 2¾ tsp chopped5 gFresh mintfinely chopped
  • 1 cup240 gPlain yogurt, low-fat

Steps

  1. Make the fruit salsa first: in a bowl, toss the mango, pineapple, lime juice and mint, then set aside.
  2. In a large bowl, whisk the flour, sugar, baking powder, salt and ground ginger.
  3. In another bowl, whisk the milk, egg, vanilla and half of the canola oil until smooth.
  4. Pour the milk mixture into the flour mixture and whisk until a thin, smooth batter forms; rest it 5 minutes.
  5. Heat a nonstick skillet over medium heat and brush it lightly with some of the remaining canola oil.
  6. Pour about 1/4 cup batter into the skillet, tilt to spread it thin, and quickly press a few banana slices into the wet surface.
  7. Cook until the edges look set and the underside is golden, about 1 1/2 minutes, then flip and cook until the bananas caramelize and the center is cooked through, about 1 minute more (160°F / 71°C for egg dishes).
  8. Repeat with the rest of the batter and banana slices, brushing the skillet with the remaining canola oil as needed until it is used up; keep the pancakes warm under a towel.
  9. Serve the pancakes topped with the fruit salsa and a spoonful of the yogurt.
