Steps

  1. Preheat the oven to 425°F (220°C) and lightly oil a 9x13-inch baking dish with about a quarter of the olive oil.
  2. On a sheet pan, toss the sweet potato and red potato with the remaining three quarters of the olive oil, half the salt and half the black pepper. Roast 20 minutes, until the sweet potato and red potato are just tender and browned at the edges. Lower the oven to 375°F (190°C).
  3. Meanwhile, cook the ground pork in a skillet over medium-high heat, breaking it up, for 5 minutes. Add the onion, thyme and paprika and cook 4 minutes, until the pork is browned and reaches 160°F (71°C).
  4. Stir the garlic and kale into the skillet and cook 2 minutes, until the kale wilts.
  5. In a bowl, whisk the eggs, Greek yogurt, mustard, dill, the remaining half of the salt and the remaining half of the black pepper into a smooth yogurt sauce.
  6. Spread the roasted sweet potato and red potato in the baking dish, scatter the pork and kale mixture over them, then pour the yogurt sauce evenly over the top.
  7. Sprinkle the cheddar over the casserole and bake 30 minutes, until set in the center, golden on top and the egg custard reaches 160°F (71°C).
  8. Rest 5 minutes before cutting into 4 portions.
