- 2 tbsp30 gLemon juice

- 1½ tbsp20 gOlive oil
- ¼ cup35 gPumpkin seeds (pepitas)
- 1½ tbsp15 gSesame seeds
- ½ tsp1 gBlack pepper
- ⅛ tsp1 gSalt
Steps
- Preheat the oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish with a little of the olive oil, using about one quarter of it.
- Heat half of the olive oil in a skillet over medium heat. Cook the onion and zucchini for 5 minutes until softened, then stir in the garlic for 30 seconds.
- Make the herb broth: in a saucepan, bring the vegetable broth to a simmer, then take it off the heat and stir in the dill, parsley, lemon juice, lemon zest, black pepper and salt.
- In the baking dish, combine the rice, chickpeas, cooked onion mixture, spinach and feta, spreading them evenly.
- Pour the hot herb broth over the rice mixture, stir once, cover tightly with foil and bake for 40 minutes, until the rice is tender and the broth is absorbed.
- Meanwhile, make the seed crust: toss the pumpkin seeds and sesame seeds with the remaining olive oil (the last quarter).
- Uncover the casserole, scatter the seed crust over the top and bake uncovered for 10 more minutes, until the seeds are toasted and golden.
- Rest the casserole for 10 minutes before scooping into bowls.
