- 2 containers (6 oz)300 gPlain Greek yogurt, nonfat
- ⅓ cup crumbled60 gFeta cheesecrumbled
- 1¾ tsp4 gPaprika (sweet or smoked)
- 1 tsp2 gGround cumin
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
- ⅓ cup40 gPumpkin seeds (pepitas)

Steps
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with about one quarter of the olive oil.
- Heat another quarter of the olive oil in a large skillet over medium heat. Cook the red onion 5 minutes until soft, add the garlic for 30 seconds, then stir in the kale and cook 3 minutes until wilted. Set aside.
- Toss the sweet potato slices and red potato slices with the remaining half of the olive oil, then microwave covered or steam 6 to 8 minutes until just tender at the edges.
- Make the yogurt custard: whisk the egg, Greek yogurt, paprika, cumin, salt and black pepper in a bowl until smooth.
- Layer half of the sweet potato slices and half of the red potato slices in the dish, spread the kale mixture over them, scatter on the feta, then top with the remaining half of the sweet potato slices and red potato slices.
- Pour the yogurt custard evenly over the layers, letting it settle between the slices.
- Mix the pumpkin seeds and sesame seeds and sprinkle them over the top.
- Bake 40 to 45 minutes, until the sweet potato and red potato slices are tender, the custard is set and reaches 160°F (71°C) in the center, and the seed crust is toasted.
- Rest 10 minutes before cutting into 4 portions.
