- 1¾ tsp4 gPaprika (sweet or smoked)
- 1½ tsp3 gGround cumin

- ¼ cup60 gWater
- 8 large400 gEggs
- 8½ oz240 gPlain Greek yogurt, nonfat
- ½ lemon, juiced24 gLemon juice
- 2 medium30 gGreen onionsthinly sliced
Steps
- Make the yogurt sauce first: stir the Greek yogurt, lemon juice, one third of the garlic, one third of the cumin and one quarter of the salt in a small bowl; chill until serving.
- Heat the olive oil in a large lidded skillet over medium-high heat. Add the sweet potato and red potato in an even layer and cook, stirring occasionally, until browned on several sides, about 10 minutes.
- Add the water, cover, and cook over medium heat until the sweet potato and red potato are tender when pierced, about 6 minutes; uncover and let any liquid cook off.
- Add the yellow onion and red bell pepper and cook until softened, about 5 minutes. Stir in the remaining two thirds of the garlic, the paprika, the remaining two thirds of the cumin, the black pepper and half of the remaining salt; cook 1 minute.
- Fold in the kale and cook until just wilted, about 2 minutes.
- Make 8 wells in the hash, crack the eggs into them and sprinkle with the last of the salt. Cover and cook over medium-low heat until the whites are set and the eggs reach 160°F (71°C), 5 to 7 minutes.
- Spoon the hash and two eggs into each of 4 bowls, drizzle with the yogurt sauce and scatter the green onions on top.
