  1. Make the herb yogurt first: stir the Greek yogurt, dill, lemon juice and a pinch of the salt (about a quarter of it) in a small bowl; chill until serving.
  2. In a saucepan, bring the chicken broth and water to a simmer, stir in the oats, and cook over medium-low, stirring often, 5 to 7 minutes until creamy. Cover and keep warm off the heat.
  3. Heat half the olive oil in a large skillet over medium-high. Add the ground turkey, thyme, paprika, red pepper flakes, black pepper and half the salt; cook, breaking it into crumbles, 7 to 8 minutes until browned and cooked to 165°F (74°C). Transfer to a plate.
  4. Add the remaining half of the olive oil and the mushrooms to the skillet; cook 5 minutes until golden. Add the garlic and cook 30 seconds.
  5. Add the spinach and the remaining quarter of the salt; toss until just wilted, about 1 minute. Return the turkey to the skillet and toss to combine.
  6. Divide the oats among four bowls, top with the turkey and mushroom mixture and the cherry tomatoes, spoon over the herb yogurt, and finish with the green onion.
