Steps

  1. Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.

  3. Roast for 20 minutes, then stir.
  4. Toss the kale with the remaining third of the olive oil, add it to the pan and roast 10 minutes more, until the sweet potato is tender and browned and the kale edges crisp.
  5. While the pan roasts, bring a pot of water to a boil, lower in the eggs and simmer 8 minutes until the whites are set and the yolks are jammy and thick, about 160°F (71°C); move to cold water, then peel and halve.
  6. Make the tahini sauce: whisk the tahini, half the lemon juice, the garlic and one-quarter of the remaining salt, then whisk in the warm water until smooth and pourable.
  7. Make the salad: toss the cucumber, cherry tomatoes and parsley with the remaining half of the lemon juice and the rest of the salt.
  8. Divide the roasted sweet potato, chickpeas and kale among four bowls, top with the cucumber salad and the eggs, and drizzle with the tahini sauce.
