- 1¼ cups (300 ml)300 gMilk, 2%
- ⅔ cup shredded80 gCheddar cheeseshredded
- 1 tsp1 gDried thyme
- 1¼ tsp3 gPaprika (sweet or smoked)
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
- ⅓ cup40 gPumpkin seeds (pepitas)

Steps
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with a little of the olive oil, keeping the rest.
- Heat the remaining olive oil in a skillet over medium heat. Cook the onion 4 minutes, then add the zucchini, red bell pepper and garlic and cook 5 minutes until softened. Set aside.
- Make the creamy sauce: whisk the eggs, milk, grated carrot, half of the cheddar, the thyme, half of the paprika, the salt and the black pepper in a bowl.
- Layer half of the sweet potato and half of the russet potato in the dish, spread the cooked vegetables over them, then layer the remaining sweet potato and russet potato on top.
- Pour the egg sauce evenly over the layers, pressing the potatoes down so they are coated.
- Cover with foil and bake 35 minutes.
- Mix the pumpkin seeds, sesame seeds, the remaining half of the cheddar and the remaining half of the paprika. Uncover the dish and scatter this seed crust over the top.
- Bake uncovered 20 to 25 minutes more, until the potatoes are tender, the seeds are toasted and the center reaches 160°F (71°C).
- Rest 10 minutes before slicing into 4 portions.
