Strawberry Vanilla Egg-Free Nog

Ingredients

  • 2 cups300 gFrozen strawberries, unsweetened
  • ¼ cup55 gGranulated sugar
  • 2½ cups (590 ml)600 gWhole milk
  • ⅓ cup (80 ml)80 gHeavy cream
  • 2 tbsp16 gCornstarch
  • 1½ tsp6 gVanilla extract
  • ½ tsp1 gGround nutmeg
  • ¼ tsp0.5 gGround cinnamon
  • ⅛ tsp0.5 gSalt

Steps

  1. Put the frozen strawberries and half the sugar in a saucepan over medium heat and cook, stirring and mashing, for 6 to 8 minutes until the berries collapse into a thick, jammy sauce.
  2. In a bowl, whisk the cornstarch with about a quarter of the whole milk until smooth to make a slurry.
  3. Add the remaining whole milk, the heavy cream, the remaining half of the sugar, the nutmeg, the cinnamon and the salt to the strawberries in the pan and heat, stirring, until steaming.
  4. Whisk in the cornstarch slurry and simmer gently, stirring constantly, for 2 to 3 minutes until the nog lightly coats a spoon.
  5. Take the pan off the heat and stir in the vanilla.
  6. For a smooth nog, whisk hard or use an immersion blender; leave it as is for little strawberry bits.
  7. Pour into a container, let cool briefly, then chill in the fridge for at least 2 hours until cold.
  8. Stir well and pour into 4 glasses, over ice if you like.
