- 3 tbsp chopped30 gRed onionfinely diced

Steps
- Make the hummus: blend the chickpeas, tahini, two-thirds of the lemon juice, the garlic, the water, 10 g of the olive oil and a quarter of the salt in a food processor until smooth. Set aside.
- Mix the cumin, coriander, paprika, black pepper and half of the salt in a small bowl. Rub this spice mix all over the pork tenderloin with 10 g of the olive oil.
- Heat a large skillet over medium-high heat. Sear the pork, turning every 3 to 4 minutes, then lower the heat to medium and cook until it reaches 145°F (63°C) inside, about 15 to 18 minutes total. Rest it on a board for at least 3 minutes, then slice thinly.
- While the pork rests, toss the cucumber, cherry tomatoes, red onion and mint with the remaining third of the lemon juice, the remaining 5 g of olive oil and the remaining quarter of the salt.
- Wipe the skillet and toast the bread slices in it over medium heat until golden, about 1 to 2 minutes per side.
- Spread the hummus over the toasts, layer on the sliced pork, and spoon the cucumber-mint salad on top. Serve two open toasts per person.
