Steps

  1. Rinse the brown rice, then bring it and 480 g of the water to a boil in a saucepan. Cover, reduce to low and simmer about 40 minutes until tender; rest 5 minutes, then fluff.
  2. While the rice cooks, toss the pork with half the cornstarch and one third of the soy sauce in a bowl; set aside.
  3. Make the sauce: in a small bowl whisk the remaining two thirds of the soy sauce, the honey, the toasted sesame oil, the remaining half of the cornstarch and 60 g of the water.
  4. Toast the sesame seeds in a dry large skillet over medium heat for 2 to 3 minutes until golden; transfer to a plate.
  5. Heat half the canola oil in the skillet over high heat. Add the pork in a single layer and sear 3 to 4 minutes, turning, until browned and cooked to 145°F (63°C). Move to a plate and let rest 3 minutes.
  6. Heat the remaining half of the canola oil in the skillet. Add the carrot and broccoli and stir-fry 2 minutes, then add the remaining 80 g of water, cover and steam 2 to 3 minutes until crisp-tender.
  7. Uncover, add the garlic and ginger and stir-fry 30 seconds until fragrant.
  8. Return the pork, stir the sauce, pour it in and toss 1 minute until thick and glossy.
  9. Serve over the rice, topped with the green onion and the toasted sesame seeds.
