  • ½ tsp3 gSalt

Steps

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment.
  2. In a saucepan, bring the rice, the water and a pinch of the salt to a boil, cover, and simmer on low for 40 to 45 minutes until tender; rest covered 10 minutes.
  3. Meanwhile, pulse the oats in a food processor until coarse. Add the great northern beans, walnuts, half the garlic, half the paprika, the oregano and the black pepper, and pulse to a coarse paste.
  4. Transfer the bean mixture to a bowl and stir in the egg, parmesan and half the parsley until it holds together.

  7. While the balls bake, heat the remaining half of the olive oil in a large skillet over medium heat. Cook the onion and bell pepper 7 minutes until soft.
  8. Add the remaining garlic, the remaining paprika and the tomato paste; stir 1 minute.
  9. Add the canned tomatoes and the remaining salt and simmer 15 minutes, mashing some of the pepper for a thick sauce.
  10. Nestle the baked balls in the sauce and simmer 3 minutes, spooning sauce over them.
  11. Serve over the rice, sprinkled with the remaining parsley.
