- ⅓ cup90 gApple cider vinegar
- ¼ cup60 gWater
- 2 tsp8 gGranulated sugar
- ⅔ cup sprigs6 gFresh dillchopped
- 3 cups shredded210 gGreen cabbagefinely shredded
- ½ medium60 gRed onionthinly sliced
- 3½ tbsp50 gYellow mustard
- 2⅛ tsp15 gHoney
- 3 oz80 gPlain Greek yogurt, nonfat
- 1½ tbsp20 gCanola oil
- 1¾ tsp4 gPaprika (sweet or smoked)
- 1 tsp3 gGarlic powder
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
Steps
- Make the quick pickles first: stir the cider vinegar, water, sugar and dill until the sugar dissolves, add the cucumber and red onion, and set aside for at least 30 minutes.
- Preheat the oven to 425°F (220°C). Toss the sweet potato with half the canola oil and a quarter of the salt, spread on a baking sheet, and roast 30 to 35 minutes, turning once, until browned and tender.
- Meanwhile, make the sauce: whisk the mustard, honey and Greek yogurt until smooth.
- Mix the paprika, garlic powder, black pepper and the remaining salt. Divide the turkey into 8 loose balls without seasoning them yet.
- Heat a large cast-iron skillet over medium-high heat and add the remaining canola oil. Add 4 turkey balls, smash each flat with a sturdy spatula, and sprinkle with half the spice mix.
- Cook 2 to 3 minutes until crusty, flip, and cook 1 to 2 minutes more until the center reaches 165°F (74°C). Repeat with the remaining 4 balls and the remaining spice mix.
- Divide the cabbage among 4 bowls, add the roasted sweet potato and 2 patties each.
- Lift the cucumber and red onion pickles from their brine and pile them on top, then drizzle with the honey-mustard sauce.
