  • 1 tbsp15 gLime juice
  • ½ cup chopped8 gFresh cilantroleaves picked

Steps

  1. Prepare all the vegetables first: chop the cauliflower, dice the red bell pepper and red onion, and mince the garlic.
  2. Heat one third of the olive oil in a large skillet over medium-high heat. Add the cauliflower, red bell pepper and red onion and cook, stirring, until the cauliflower is browned and dry, 8 to 10 minutes. Add the garlic, cumin and smoked paprika and cook 1 minute more. Transfer to a large bowl and let cool 10 minutes; wipe out the skillet.
  3. Pulse the oats in a blender or food processor until coarse, then add them to the bowl.
  4. Add the black beans to the bowl and mash with a fork until mostly smooth with some whole beans. Stir in the egg, salt and black pepper until the mixture holds together.
  5. Shape the mixture into 4 patties about 3/4 inch thick.
  6. Heat the remaining two thirds of the olive oil in the skillet over medium heat. Cook the patties until deeply browned and crisp, about 5 minutes per side, turning gently, until the center reaches 160°F (71°C).
  7. Toss the avocado slices with the lime juice.
  8. Lay two or three romaine leaves for each burger, add a patty, then top with the tomato slices, the avocado and the cilantro. Wrap the leaves around and serve.
