  • ½ cup chopped80 gRed onionthinly sliced into rings
  • 3½ oz100 gPlain Greek yogurt, nonfat
  • 1½ tbsp20 gYellow mustard

Steps

  1. Preheat the oven to 425°F (220°C).
  2. Toss the red potato wedges with half the olive oil, the paprika and half the salt on a baking sheet. Roast 30 to 35 minutes, flipping once, until golden and tender.
  3. While the potatoes roast, stir the Greek yogurt and mustard together in a small bowl for the sauce; chill until serving.
  4. Prepare the toppings: wash and dry the romaine leaves, slice the tomato and cut the red onion into thin rings.
  5. Put the ground beef in a bowl. Sprinkle the Worcestershire sauce over the beef, then add the garlic powder, onion powder, black pepper and the remaining half of the salt. Mix gently just until combined.
  6. Shape the seasoned beef into 4 patties about 3/4 inch thick, pressing a small dent in each center.
  7. Heat the remaining half of the olive oil in a large skillet over medium-high heat. Cook the patties 4 to 5 minutes per side until well browned and 160°F (71°C) in the center.
  8. Set each patty on a bed of romaine, top with tomato, red onion and a spoonful of the mustard-yogurt sauce, and wrap with more romaine. Serve with the potato wedges.
