Steps

  1. Prep first: dice the onion and celery, slice the carrot, mince the garlic, cube the potatoes, chop the kale and parsley, and drain the beans.
  2. Heat the olive oil in a Dutch oven over medium heat. Add the onion, carrot and celery and cook, stirring, until softened, about 8 minutes.
  3. Add the garlic, tomato paste, smoked paprika, thyme and red pepper flakes and stir for 1 to 2 minutes until the paste darkens.
  4. Pour in the canned tomatoes and vegetable broth, scraping up the browned bits. Add the potatoes and bring to a boil.
  5. Reduce to a simmer, cover partly and cook until the potatoes are tender, about 20 minutes.
  6. Add the beans and simmer 10 minutes. Scoop out about one cup of beans and broth, mash with a fork and stir back in to thicken the soup.
  7. Stir in the kale and cook until wilted, about 4 minutes. Season with the salt and black pepper, then stir in the lemon juice.
  8. Ladle into bowls and top each with the parsley and parmesan.
