Steps

  1. Pat the tofu cubes dry and toss them with the cornstarch until lightly coated.
  2. Heat half of the olive oil in a Dutch oven over medium-high heat. Add the tofu in one layer and sear, turning, until golden on most sides, 8 to 10 minutes. Move the tofu to a plate.
  3. Lower the heat to medium and add the remaining half of the olive oil. Add the onion and red bell pepper and cook until softened, about 6 minutes.
  4. Stir in the garlic, smoked paprika, cumin and thyme and cook for 1 minute until fragrant. Stir in the tomato paste and cook 1 minute more.
  5. Add the butternut squash, canned tomatoes with their juice and vegetable broth. Bring to a boil, then cover, reduce to a simmer and cook until the squash is tender, about 20 minutes.
  6. Stir in the edamame and the seared tofu and simmer uncovered for 5 minutes, until the edamame is hot and the stew thickens slightly.
  7. Stir in the spinach until wilted, then add the lemon juice, salt and black pepper.
  8. Ladle into bowls and top with the parsley.
